Description
Amarone della Valpolicella “A” is a red wine from the Corvina variety produced in the Canestrari winery, in the Italian region of Veneto. This 130-year-old winery is surrounded by the beautiful city of Venice to the east and the peaceful and charming Lake Garda. on West. Thanks to its terroir, where the special configuration of the Alps in the north protects the vineyards from the cold winds that blow from that direction and the influence of Lake Garda, which produces a climate that is almost Mediterranean, with extremely little snow, conditions are created for growing quality grapes. The grapes are picked and sorted by hand, and then taken to the dryers.
The historical technique of drying grapes (“appassimento”), which was known even before the time of the ancient Romans, (Arusnati, an Etruscan tribe) is a method that is peculiar to the Valpolicella region and the basis for the production of some typical wines of this zone, such as Amarone. This practice allows the grapes to dehydrate and achieve a very high sugar concentration; at the same time, important bio-physical variations take place inside the berries, which then give unique smells and aromas that are typical for these wines. The drying process takes at least 4 months. During this time, the grapes lose about 40% of their weight. Fermentation and subsequent maceration last 20 days at a temperature between 18°-22°C. The wine then matures in oak barrels for about 18 months. After bottling, the wine ages for more than 8 months in the bottle before being released.
